???metadata.dc.description.resumo???: A secagem da polpa da fruta-pão (Artocarpus altilis) transformando-a em pó é uma opção de levar produtos desta fruta para a indústria alimentícia e farmacêutica como um possível adjuvante na secagem de pastas, extratos e suspensões. Esta pesquisa teve como objetivo produzir fruta-pão em pó através da secagem por atomização (spray drying) e avaliar as características do pó obtido e sua estabilidade, durante 180 dias de armazenamento, e sua utilização como adjuvante na secagem de polpa de cenoura, chuchu e acerola. Para a secagem por atomização foi elaborado uma formulação a partir da polpa da fruta-pão com adição de água destilada na qual foi submetida ao planejamento experimental fatorial 2³ com três pontos centrais tendo como variáveis de entrada a temperatura do ar de secagem (70, 80 e 90 °C), a vazão da suspensão (4, 5 e 6 mL/min) e a concentração de maltodextrina (0, 3 e 6%) com a finalidade de definir a melhor condição de secagem para as respostas atividade de água, teor de água e teor de amido. A melhor condição de secagem por atomização foi na concentração de 0% de maltodextrina temperatura de 90 °C e vazão de 6 mL/min, na qual os pós obtidos foram armazenados e avaliados quanto a sua estabilidade. Foi feito a caracterização física, química e físico-química dos pós coletados no ciclone e na câmara de secagem e durante o armazenamento a cada 30 dias durante os 180 dias. A polpa de fruta-pão foi classificada como pouco ácida com alto teor de amido e baixa concentração de açúcares. O pó coletado no ciclone foi considerado pouco ácido com alto percentual de amido e sólidos totais, baixa atividade de água e coloração mais clara. O pó coletado na câmara de secagem foi mais solúvel e apresentou coloração mais amarelada. No armazenamento dos pós ocorreu pequeno aumento da atividade de água, com valores médios menores que 0,3 no final do armazenamento, degradação do amido após 150 dias e aumento da luminosidade. As partículas da fruta-pão em pó coletadas no ciclone foram menores, com formato irregular e dispersas, e o pó coletado na câmara de secagem apresentou partículas irregulares de tamanhos diferenciados e aglomerados com uma forte atração entre si, formando grumos. A fruta-pão em pó apresentou características adequadas para ser utilizada como aditivo na secagem de outras polpas e suspensões. As polpas de cenoura e chuchu desidratadas com adição de fruta-pão em pó apresentaram-se com menor atividade de água, maiores teores de sólidos totais, maior percentual de solubilidade, rendimento e coloração mais próxima à fruta in natura.
Abstract: Drying Pulp breadfruit (Artocarpus altilis) turning it into powder is an option to take this fruit products for the food and pharmaceutical industry as a possible adjuvant in the folder drying, extracts and suspensions. This research aimed to produce fruit bread powder by spray drying (spray drying) and evaluate the characteristics of the obtained powder and its stability during 180 days of storage, and its use as an aid in drying carrot squash, chayote and acerola. For spray drying was prepared a formulation from the pulp breadfruit with addition of distilled water in which was subjected to factorial experimental design 2³ with three center points having as input variables the temperature of the drying air (70, 80 and 90 ° C), the flow rate of the suspension (4, 5, and 6 ml / min) and the concentration of maltodextrin (0, 3 and 6%) in order to define the best drying condition for the water activity answers, water content and starch content. The best spray drying condition was at a concentration of 0% maltodextrin temperature of 90 ° C and flow rate of 6 ml / min, in which the powders were stored and evaluated for their stability. It was made physical, after the chemical and physicochemical cyclone and collected in the drying chamber during storage and every 30 days for 180 days. The pulp of fruit bread was classified as slightly acidic with high starch content and low sugar concentration. The dust collected in the cyclone was considered slightly acid with a high percentage of starch and total solids, low water activity and lighter color. The collected powder in the drying chamber was made more soluble and more yellowish. In the post of storage was small increase in water activity, with lower average values than 0.3 at the end of storage, starch degradation after 150 days and increased brightness. The particles of bread fruit powder collected in the cyclone were lower, with irregular and dispersed form, and the dust collected in the drying chamber showed irregular particles of different sizes and clusters with a strong attraction to each other, forming lumps. The powdered fruit bread showed characteristics suitable for use as an additive in drying slurries and other slurries. The pulps and dehydrated carrot chayote with addition of powdered fruit bread presented with lower water activity, increased total solids contents greater percentage solubility, yield, and color nearest the fresh fruit.
