Abstract

The dynamic behavior of the spouted bed consisting of deformable particles is difficult to predict due to changes that occur during the drying of such materiais. Shape, size, density and thermal properties including fluid dynamics and variables affecting the stability of the stream. In this work we studied the evolution of important fluid-dynamic parameters: font height, bed height, variation of pressure, air velocity and solids circulation during the drying of guava pieces in spouted bed. At the end of experiments was performed to analyze the percentage of vitamin C and rehydration. The pieces of guava, with a roughly cubicai, and initial size of around lcm, were processed in spouted bed cone-cylindrical acrylic column of 0.25 m in diameter and lm in height and inlet air 0, 05m. The guava pieces were dried in prefíxed bed so as to vary the initial moisture in spouted bed between 0.6 and 1.60 on dry basis. The air inlet temperature ranged between 47.9 C and 62.1 ° C. The tests were performed according to a 2k factorial design plus three central points and 4 axial points of the star configuration. The radial profiles of solids circulation rates were measured by a cylindrical probe equipped with windows to collect 1.2 x2, 7 cm. It was observed that with the reduction of humidity, movement of solids, the font height and velocity of air increases while the height of the bed and the variation of pressure decrease. The results confirmed the strong influence of the variation of properties over time on the fluid-dynamic parameters, vitamin C and the remaining percentage rehydration. Concerning the product quality dried in spouted bed it was found a vitamin C content between 97 and 142 mg/g, moisture (d.b) between 0,19 and 0,37, showing a good rehydration capability in the range 58% to 69%.
