???metadata.dc.description.resumo???: | Os objetivos deste trabalho foram: a) determinar as isotermas de equilíbrio higroscópico do feijão branco e do feijão preto, nas temperaturas de 20, 30, 40 e 50 oC e umidades relativas do ar de 10 a 90%, e testar 6 modelos matemáticos; b) determinar a variação de tamanho (comprimento, largura e espessura) e do raio da esfera equivalente dos grãos de feijão branco e feijão preto em função do teor de água de 10 a 45%, base úmida. Conclui-se neste trabalho que o modelo de Oswin teve o maior coeficiente de determinação (99,2%) e o modelo de Cavalcanti Mata teve o menor percentual de erro; e que a variação de tamanho (comprimento, largura e espessura) dos grãos de feijão, tanto o feijão preto quanto o feijão branco, crescem de forma linear com o aumento do teor de água. |
Abstract: | The objectives of this study were: a) to determine the hygroscopic equilibrium isotherms of the white bean and black bean, at temperatures of 20, 30, 40 and 50 oC and with air relative humidity from 10 to 90%, and to test 6 mathematical models; b) to determine the variation in size (length, width and thickness) and of the radius of the equivalent sphere of white bean and black bean as a function of moisture content from 10 to 45%, wet basis. It is concluded in this work, that the Oswin model had the largest coefficient of determination (99.2%) and the Cavalcanti Mata model had the lowest percentage of error, and that the variation in size (length, width and thickness) of the white bean and black bean, increase in a linear fashion with the increase of the moisture content. |
