Composição física dos cortes comerciais de caprinos F1 (Boer X SRD) terminados em pastejo e submetidos à suplementação.

Abstract

The effect of the supplementation with concentrated feed in the tissue composition of the commercial cuts and the prediction in the physical composition of the carcass were analyzed in twenty-four Fl cross-bred (Boer x SRD) goats finished in native pasture with initial live weight (LW) of ± 15,52 kg and 120 days of age. The experiment was conducted at the "Nupearido" farm of the CSTR of the Federal University of Campina Grande (UFCG), in the municipality of Patos - PB. The experimental diets were constituted of native pasture and increasing levels of supplementation: 0,0; 0,5; 1.0 and 1,5% LW in dry matter. The slaughter weights were the following: 25,12 kg; 26,62 kg; 28,56 kg and 29,19 kg for the respective levels of supplementation and corresponding to 218 days of age. The carcass was sectioned in half, and from the left half carcass was separated the cuts: leg, loin, ribs, shoulder and neck, which were dissected into muscle, bone and fat, with the results expressed in tissue weight and yield in relation to the weight of the cut. In relation to the prediction at the end of the dissection, the reconstitution of the half-carcass was fulfilled, and the quantity of tissue constituents in the half carcass were obtained, which were used for the obtain of the tissue yield in the carcass. The weight and yield of the carcass were predicted from the tissue weight and yield in the commercial cuts, being the data submitted to the variance and regression analysis. The supplementation positively affected the muscle weight, as well as the weight and yield of fat, and in a negative way the relation muscle:fat, however there was no influence in the proportion of muscle in the five studied cuts. For the obtainment of commercial cuts of better completion it is recommended a supplementation of 1,0 and 1,5% of LW, but if the purpose is lighter cuts and a good proportion of muscle the supplementation becomes unnecessary. The ribs better estimated the carcass's muscle and fat yield, and if taken into account the comparison of the yield averages in the tissue obtained in the cuts and in the carcass, the shoulder was the cut that best represented the tissue composition of the carcass of the Fl (Boer x SRD) goats.
