dc.description.resumoO presente trabalho objetivou analisar a cinética de secagem de maçã (Mallus domestica), acondicionada em estufa à temperatura de 40ºC durante um período de 10 horas, e avaliar o ajuste dos modelos de Newton, Page, Henderson e Pabis e Logarítmico pelo coeficiente de determinação (R²) e qui-quadrado reduzido (χ²). O experimento foi realizado em duplicata, utilizando maçãs cortadas em rodelas com 5,0 mm de espessura e diâmetro médio de 4,9 cm. Os modelos propostos se ajustaram bem aos dados experimentais, porém o melhor foi o de Page, por apresentar maior R² e menor χ², indicando que este modelo representa satisfatoriamente o fenômeno de secagem de maçã em estufa. dc.description.abstractThe present work aimed to analyze the drying kinetics of apple (Mallus domestica), conditioned in stove at temperature of a 40 degree for a period of 10 hours, and evaluate the fit of Newton, Page, Henderson and Pabis and Logarithmic models by the determination coefficient (R²) and reduced chi-square (χ 2). The experiment was performed in duplicate, using sliced apples with 5.0 mm thickness and a mean diameter of 4.9 cm. The proposed models were adjusted to the experimental data, but the best was the Page, because it presents higher R² and lower χ², making this model satisfactorily represent the drying phenomenon of apple drying in stove.pt_BR
