Elaboração e aplicação de um método de otimização de processo baseado na redução de perdas: o caso de uma vinícola.

Abstract

Aiming customer satisfaction, companies seek better techniques in manufacturing practices on a daily basis. To adapt to this competitive environment, some companies have been using the concepts and techniques of Lean Production or Toyota Production System (TPS). In the Region of the São Francisco Valley are installed more than ten wineries, the company object of this study is one of those, which is pioneer in this region and constantly fights for this market share. In order to remain competitive, it aims at strategies that ensure such performance. For this, this study presents a method for the identification of wastes verified in TPS. When applying the component steps of this method, an unbalance of the component activities of the process under study was detected, as well as inefficiency in the current layout. Suggestions for improvements related to these bottlenecks would provide a reduction in 7-second worker idleness, a two-manpower abatement, and a 23.5-meter reduction in operator travel. Through these solutions it would be possible to minimize costs, increase the quality of process performance, and consequently maximize profits. The application of the method showed efficiency in waste identification and in the generation of proposals for actions to reduce them.
