Análise da estimativa da pegada hídrica total: um estudo de caso de uma indústria de sovertes localizada no sertão paraibano.

Abstract

The water footprint is an important indicator to measure the water consumption of human activities in a given company or geographic region, and can be defined as the direct and indirect volume of water used in a productive process of goods and / or services of a company. Thus, the objective of this research was to determine the total water footprint of the ice cream production process in an industry located in the Paraíba hinterland. The cumulative sequential method was used to determine the total water footprint of the analyzed ice cream, individually identifying the water footprint of the inputs that make up the product. As a result of the research, the Water Footprint of the base composition of the product and of different flavors were identified. Based on the results, a content analysis was performed identifying that the water footprint of the final product undergoes significant variation, since it depends on which input was incorporated into the production process. Inputs with a higher water footprint increase the final water footprint of the product. An alternative to minimize the final water footprint is the substitution of inputs, or decrease the production of flavors of ice creams that use water resources the most in their process
