The aim of the present study was to study mango cv Haden pulp dehydration by foam
mat drying, assessing the quality of the pulp, foam and powder produced at the end of the
drying process. Mangos. Super Liga Neutra and Emustub additives and formulations tested for stable foam production, based on density, over-run and toam stability. were previously selected. Based on these parameters, was used the best formulation (Treatment 5). composed of Haden mango pulp, 1.5% Super Liga Neutra and 1.5% Emustub, with 30 minutes of beating. Rheological behavior of the pulp at 25 "C was also evaluated using a Brookfield viscometer, with experimental data fitting by Power Law. Mizrahi-Berk and Herschel-Bulkley models. Once lhe besi formulation was delineei, it was characterized with respecl to chemical, physical and physicochemical composition. The best formulation (Treatment 5) was dehydrated ín a forced air circulation oven at 50, 60 and 70 "C. with three foam laycr tluckiiesses (0.5; 1.0 and 1.5 cm): drying curve behavior was assessed and til lo Henderson cV Pabis, Henderson and Logarithmic models; and physical. chemical and physicochemical analyses of powder samples were carried out. For Haden mango powder ( freatment 5 - 50 "(' 1.5 cm) we deiermined moisture adsorption isotherms, at 20. 30 and 40 "C and fu GAB, Oswin and Peleg models to experimental data. Powder morphology (Treatment 5 - 50 "C 1.5 cm) was deiermined under scanning electron microscope (SEM) and powders were stored in a B()D ehamber. at 25 and 40 °C, with relative humidiíy of 55%. Results show thai whole pulp was within Brazilran legal standards, and classified as a pseudoplaslie non-Newioman lluid. with best til provided by the Mizrahi-Berk model. The formulation selected showed density of 0.5412 g/cm and over-run of 93.22%. The pulp formulated eoniained lugher total solids. total soluble solids and vitamin C leveis. The shortest drying time was observed in lhe lemperalure
of 70 "C with foam layer thiekness of 0.5cm. The Henderson &. Pabis. Henderson and
Logarithmic models can be used to represem the drying process. given lhat the> exhibit high eoefficienls of determination (R2 > 0.9X04) and mean square deviations less than 0.0021. Haden mango powder showed acid pll. low water activity, high total soluble contem, angle of repose and yield. Oswin. GAB and Peleg models can be used to eslimale moisture adsorption isothenns. Morphology demonstrated thai particles varying size and with manv imperfections over the entire surface. During powder slorage, moisture, ascorbie aeid. luminosiiy and yellowness decreased, while increases were observed in the other cases.
