Resumen:
Brazil is one of the largest consumers and exporters of beef in the world, it is
estimated that this market turns around U.S. $ 67 billion per year (Brazil, 2013). In
order to guarantee a food quality and food safety is necessary to standardize the
entire production chain from obtaining raw materials to finished product, with a view
to improving choice and the best methods to optimize the process in this way.
This work gathers information from aborting Good Manufacturing Practices standards
and regulatory guidelines of Brazil, to meet with safety and health of this market
constantly expanding and increasingly demanding. A literature review was
systematically performed in Medline, Pubmed, Lilacs, SciELO and national and
international health committees, the articles published in the last twenty- five years
addressing the Practice Abatement in slaughterhouses. The following search terms
(keywords and delimiters) were used in various combinations: 1) slaughterhouses; 2)
Good Manufacturing Practices. The literature search included original articles, review
articles, editorials and guidelines written in English and Portuguese, being selected
according to the criteria of the Oxford Centre for Evidence. However the work is
concluded that good manufacturing practices are effective and intrinsic to the
production of a safe product.
