Resumo:
Some basic parameters of carioquinha beans necessary for the mathematical modeling of thick layer drying were studied.
Specific heat, specific mass and porosity of Carioquinha beans were determined as a function of moisture content and a linear equation for specific heat was obtained by regression analysis and third degree equations for specific mass and porosity that were adjusted. very well to the experimental data of these parameters. Thin layer drying equations were also developed for Carioquinha beans as a function of temperature and initial moisture content of the product, using the Thompson and Paqe models. It can be concluded that the Thompson and Paqe equations fit very well with the experimental data for the range of
temperature (40,50,60, 70 and 80 ° C) and initial humidity (0,2346; 0,2739; 0,2987; 0,3158 decimal b.s.) used in this work.
