Resumo:
The study in question uses a bibliographical analysis to discuss the importance of the use of microorganisms in the various industrial food processes that are inserted in everyday society in general. We highlight the history and concepts related to Microbiology and Biotechnology, discussions and discussions, an analysis of such microorganisms and their importance according to the product of their metabolisms, locating with a presentation of chemical studies currently used to optimize such effects of metabolization of raw materials and food production as the use of bioreactors. In conclusion, realize the enormous importance of bacteria and fungi for human consumption, as well as the need for research and scientific production that optimize the metabolic processes of these beings, for the benefit of the community.
