Diseases that occur foodborne cause concern because the population is constantly consuming products and using services that need to be safe, with that food security is an issue that is gaining importance every day, on that basis the Health Surveillance focuses , controlling all the steps and processes for the manufacture of food products. This study aims to analyze the data obtained in monitoring the audited inspections by the team of Visa, and diagnose the problems often encountered in handling establishments and food marketing in the municipality of Sousa PB, classified as: bars / restaurants, grocers, shops, supermarkets and home products, we analyzed the data according to the requirements of Sanitary Surveillance based on existing regulations. It is concluded that establishments with larger quantities inspected and found non
conformities were Coffee shops (33.98%) and supermarkets (29.13%), for being chosen an amount a little higher than others for inspections be carried out, because they are services that serve a much larger audience, as there are several handling and marketing products, which have a higher degree of risk to consumers. Followed by other Bars / Rest (17.48%), grocers (13.60%) and the lowest amount Products Homemade (5.82%) they have less to exist few such establishments in the city. It is observed that the total number of inspections, 51 establishments (54.79%) complied and 52 establishment (45.21%) are not in accordance according to RDC No. 216 (BRAZIL, 2004). The correction is made through educational measures reported by the Health Surveillance which is of great importance because contribute correcting incoformidades found minimizing the possible dates that could cause harm to public health which is the main focus of the inspections.
