Due to the increased consumption of dairy products in Brazil, the development of this productive chain has been driven and is directly linked to improving the quality, as well as diversification of products on the market. Milk is a highly nutritious food source of protein, carbohydrates, lipids, vitamins and minerals whose function is to provide nutrients and immune protection for the newborn. In addition to these biological functions, milk supplies large industrial processing possibilities for the purchase of various products for human consumption. The quality of this input is widely discussed in various areas of dairy production scenario, being influenced by many variables, such as husbandry factors associated with handling, feeding, genetic potential of livestock and factors related to the procurement and storage of the product. Under this scenario, the present study aimed to evaluate the quality of refrigerated raw milk from Paraíba hinterland. Data were obtained in a Dairy industry of Paraiba backlands. The analyzes relating to these data were carried out between the months of January to December 2014, with 25 milk suppliers. The results were satisfactory, as there was great improvement in the quality of milk, since chemical composition values of bacteria and somatic cell count were within those recommended by law.
