Resumen:
This study aims to provide current information about the difference between lactose intolerance and allergy to cow's milk protein, emphasizing on the concept, causes and treatment of the same, describe how these products are prepared and understand what dairy products are prescribed when restrictions lactose and milk protein are required. Intolerance is a physiological reaction to lactose common in children and adults who show poor digestion or malabsorption of lactose after eating milk and dairy products. Have allergy to cow's milk protein, called the CMPA, is characterized by the reaction of the immune mechanism when it comes into contact with the milk proteins and affecting manifestations in children up to four years, but from that stage one can turn into intolerance to lactose. Lactose intolerance has a strong influence on the lives of people with symptoms, it affects not only the health, the quality of life of the same and it is important early diagnosis and treatment. However, the total and definitive removal of lactose from the diet should be avoided because it can lead to nutritional problems calcium deficiency, phosphorus and vitamins, it may be associated with decreased bone mineral density and fractures, among others. In the case of lactose intolerance is not necessary to the total restricted diet of milk, some derivatives are well accepted. In Brazil, the market for products with low and / or zero lactose content is not very diversified, however, is promising for investment by dairy industries has given exclusive importance to these foods.
