Résumé:
The objective of this study was to evaluate, quantify the bioactive compounds and the antioxidant capacity of fruits Spondias genus: red mombin fruit (Spondias purpurea L.) and umbu (Spondias tuberosa Arr. Câmara) in the semiarid region of Paraiba, during the postharvest under two storage temperatures at three different stages of maturation. The quality assessments were determinations of mass loss, soluble solids, treatable acidity, pH, SS / TA ratio, soluble sugars, reducing sugars and subjective evaluation of physical appearance for the quantitation of biologically active compounds were determinations of ascorbic acid, chlorophyll and carotenoids, flavonoids and anthocyanins yellow; Total Polyphenols Extracted - PET and evaluation of total antioxidant activity in the system of co-oxidation of linoleic β-caroteno/acid. According to the results found to decline of ascorbic acid in the last storage periods for the three stages, in the two temperatures. There was a reduction in chlorophyll content of the pulp in the last periods of the shell of the fruit storage under the different temperatures measured, detecting the degradation of dye during storage. Fruits of the genus Spondias had a great percentage of antioxidant activity. The fruits of umbu had percentage of inhibition of oxidation with values above 70%, since the ciriguelas showed values above 80%, regardless of maturity stage and temperature.
