This study aimed to quantify food waste in the Food and Nutrition Unit (UAN) of the Federal Institute of Paraíba-Campus Sousa-São Gonçalo Unit. The research was conducted during the period from 19.07 to 26.07.2019. We analyzed Weight of Food Produced (PAP), Weight of Distributed Food (PAD), Weight of Leftovers (PS), Weight of Leftovers (PR), Served Meals (RS), Weight of Eaten Food (PAC), Weight of Produced Food per capita (PAPpc), Weight of Food Eaten Per Capta (PACpc), Rest Index (IR), Leftover Index (IS), Weight of Leftover Per Capta (PSpc), Weight of Leftover Per Capta (PRpc), Eaten Diners with the accumulated leftovers (CASA) and diners fed with the accumulated rest (CARA). There is a high waste in the UAN studied, making it necessary to perform actions with the diners to know their food preferences, and campaigns related to waste awareness, as well as periodic training with employees to improve service, reduce waste and reduce unit costs.
