Abstract:
The Sheep-raising is an activity that is in great expansion, mainly with relationship to
the animais destined to the slaughter. The área polarized by Pombal - PB develops
this activity fully, with that was aimed with the accomplishment of this work to
accompany and to describe the commercialization and to accomplish the physicalchemical
analysis of the sheep meat marketed in the municipal of Pombas - PB. This
work was accomplished through interviews with the freezers owners,
slaughterhouses and markets that market of the sheep meat in the municipal. Of
each type of establishment were collected sample of meat for accomplishment for
the analysis physical-chemistry. They were appraised the characteristics: protein, pH,
'Brix, humidity and ashes. The municipal don't still present flock sheep destined for
enough cut to assist to the local demand and the establishments that market the
lamb meat they need to improve the hygienic-sanitary conditions of its facilities. The
values found in the physical-chemical analysis of the samples for pH, 'Brix, protein,
humidity and ashes are in agreement with mentioned in the literature. A course of
good practices of manipulation of victuals of animal origin is suggested for the local
merchants.
