Resumo:
Moringa is considered an arboreal vegetable high in nutritional vague. lts richness in
vitamina, minerais, nutriente and organic compounds means that there is the interest of
researchers in developing research to scrutinize these attributes. Because ofthese unique
characteristics, this plant is gaining ground in Brazil, either for 6ood or 6eed. Moringa
seeds were collected in the CCTA área ofthe Federal Universidade Federal de Campina
Grande, Campus de Pombas. The seeds were subjected to temperatures of40, 50, 60 ' C
with a progressive weighing until constant weight using empirical modela Lewis
Herdenson and Pabis, Pelege and page to describe the dehydration curve of Moringa
seeds. Then physicochemical analyzes were performed where the parameters evaluated
were: proteins, lipids, ash, moisture and carbohydrates. The model that best suited was
the Page because it was the one that better represented graphically. The flour Moringa
seeds showed good percentage was produced at 40 ' C.
