Resumen:
The objective of this study was to evaluate the physicochemical properties, post-harvest quality of the fruit submitted to refrigeration and the efficacy of spirulina platensis biomass- based edible coatings on aryl conservation of pomegranate genotypes. The study was subdivided into three stages in the Post-Harvest Technology Laboratory of Fruits and Vegetables. In the first stage, a sample of 18 fruits of each genotype was selected to carry out their characterization through visual and physical-chemical evaluations. In the second stage the experiment was set up in a completely randomized design, in the scheme of plots subdivided in time using four replicates of eight fruits. The plots were represented by the pomegranate genotypes (CV4, CV8 and CV12) and the subplots for the evaluation periods over time of 20, 21, 22, 23 and 24 days of storage in a refrigerated chamber at 10 ± 2 ° C 80%
± 5UR. In the third stage, the experiment was carried out in a completely randomized design, in the 3x5 factorial scheme, three cultivars (CV8, CV10 and CV12) and 5 concentrations of Spirulina platensis (T1: 0,0% - No coating: T2: 0,04 Spirulina platensis, T4: 0.08% Spirulina platensis, T5: 0.1% Spirulina platensis), with 5 replicates consisting of 100 g of aryl. The treatments were associated with 3% Agar, 0.3mL / L pomegranate seed oil and 1mL / L tween
20. The coated arils were stored in trays wrapped with pvc film and stored in a refrigerated chamber at 5 ± 2 ° C 80% ± 5UR for a period of 15 days. The genotype of pomegranate CV12, produced in the Tablasiro de Russas, CE, gathered physico-chemical characteristics that meet the quality standard for the commercialization of fruits in natura form. Storage at 10 ± 2ºC, 80 ± 5% RH for 20 days maintained the physico-chemical characteristics of the CV12 genotype suitable for the in natura commercialization of the fruits. Stored fruits 10 ± 2ºC, 80 ± 5% RH for 24 days can be destined to the processing industry, since they did not have the internal attributes of quality impaired. The CV12 genotype presented the best physical-chemical quality of aryl in the T2 coating (0.04% Spirulina platensis) with the lowest mass loss 4.21%, lower value for titratable acidity 0.30% citric acid, SS ratio / AT high 38.00 and higher content of phenolic compounds 146.35mg.100mL-1. In relation to the microbiological quality, all the counts for bacteria of the coliform group registered are within the standards established by the norms in force and in none of the samples was detected presence of salmonella, characterizing the efficiency of the coating in maintaining the quality of the arils.
