Abstract:
The competition that organizations are exposed requires a efficient management so that they can ensure their permanence and development in the current market. The loss control is crucial to ensure the competitiveness of commercial activities involving manufacturing. In retail companies, controlling losses and discovering their causes result in benefits for businesses and customers. Thus, this work aimed to study the losses resulting from the process of adding value of beef in butchers, focusing on the best-selling meats of a chain of supermarkets of Paraíba, inside tea or Topside. The methodology used in this research brings together the data collection in person and application of quality tools: activity flowchart, control diagram, Ishikawa diagram and 5W2H. It is noteworthy that data collection involved the daily monitoring of employees and there was also an efficient confronting of the data generated with what actually occurred within the work area. The use of these tools proved to be efficient for the study, reporting easily interpretable data, to demonstrate the losses related to the Topside meat, as well as creating improvement measures to reduce these losses.
