Artificial antioxidants have been linked to various diseases and some to environmental pollution. With this, he has sought to develop natural additives from sustainable matrices and non-toxic solvents, so that they feel similar to synthetic antioxidants. As unopened food plants encompass this cause as well as distilled water. In addition, as leaves of aroeira, moringa and São Caetano melon are inputs used as they are underused by the relevant antioxidant industries and activities. As stated or exposed, the objective of this study is to produce extracts of the leaves of aroeira, moringa and melons of São Caetano, use distilled water as an oil extractor and evaluate an action of this solvent on the yield of extracted bioactive compounds and antioxidant activity. For this, the total phenomena, total flavonoids and antioxidant activities, FRAP and ABTS, of the extracts were quantified. It is not that the extract of mastic leaf has higher (p <0.05) levels of phenolic compounds (870.38 ± 0.00 mg EAG / 100g) and total flavonoids (215.21 ± 6.13 mg EC / 100g ), followed by moringa leaf (262.20 ± 15.25 mg EAG / 100g and 194.17 ± 5.05 mg EC / 100g) and São Caetano melon (p <0.05) (73.55 ± 5 , 45 mg EAG / 100g and 43.54 ± 3.61 mg EC / 100g). Does not affect the antioxidant activities ABTS and FRAP, the results were similar, one mastic leaf (77.78 ± 7.25 and 7.62 ± 0.37 μmol TEAC / g, respectively) if highlighted, followed by the moringa leaf. (18.51 ± 3.04 and 3.39 ± 0.46 μmol TEAC / g) and São Caetano melon leaf (3.74 ± 0.97 and 0.26 ± 0.02 μmol TEAC / g). In addition, IC50 values reinforce the mastic leaf as a more effective matrix. Finally, conclude that aroeira leaf is a raw material that is rich in bioactive compounds and subsequently has higher antioxidant activity.
