Abstract:
The production of rennet cheese is an important economic activity for both the dairy industry and family farming, however, production, handling and storage may cause undesirable microorganisms that are a risk to consumer health. Thus, we aimed to evaluate the microbiological quality of curd cheeses sold in the free fair in the city of Cuité-PB. As a food microbiology laboratory at the Federal University of Campina Grande, Cuité campus. Those categorized into A, B, C and D as microbiological analyzes include the determination of MPN from total and fecal coliforms, a search for Listeria monocytogenes and Salmonella sp, a coagulase-positive Staphylococcus count, mesophilic and psychotrophic microorganisms. Based on the selected results, it can be noted that the items collected at the fair are prohibited according to current legal microbiological standards. It can be concluded that those analyzed reported Good Manufacturing Practice as indicated.
