Resumen:
This paper deals with a quality control case study in a cookie factory. The objective was to analyze the productive process of a cookie factory, through the quality tools, to identify the causes for the main problems of the product. A check sheet, Pareto chart, cause and effect diagram, and control chart were used to monitor production quality. From the verification sheet, errors were observed in the production line and when constructing the Pareto graph, it was noted that the burned cookie error represented more than half of the occurrences, requiring a better verification of the causes for the high number. In consequence, an Ishikawa diagram was prepared with all possible causes for this error to occur, and a plan of action with all causes and possible solutions for each was created. A control chart, X-bar and R-bar were also made, showing several points outside the control limit, presenting and describing like this the special causes that occurred, the main ones being: employee replacement, heavy mass and the change of brand of wheat flour.
