In view of the actual scenario of competitively, the companies should continually look for produce items with a better quality, in order to reduce shorts and losses of resources, and ensure your presence on the market. Thus, the statistical control of the process presented as one too efficient for the monitoring of the process manufacturing of products, directing influenced on the quality of the elements produced and on the relationship of the costumers with the company. Based on the above considerations, the presents work shows off one analyze of the process of filling of pasteurized milk, in one company benefactor milk, localized on cariri paraibano, by means of the application of control graphics and calculations of index of capacity and performance of the process. The aims of this study was identifies the performance of the process of the company, inspecting the height of the milk stored in the package and this way create statistical data that substantiate the decision making, as well as identify if this meets the existing legislation. The results showed that the process is out of control, not meeting the company’s specification limits or the criteria imposed by improvements were recommended that will result in a more effective and standardized process.
