Abstract:
The Spondias sp (Cajarana of the Hinterland) is a xerofila plant found in northeastern
semiarid, little investigated by researchers, among others of the same gender and family.
Therefore this study it objectified the evaluation of the physical characteristics of the
fruits, physicist-chemistry and bromatológica of the pulp and sensorial analysis of the
juice of the fruit of Cajarana of the Hinterland in maturation stage, produced in irrigated
small farms (Granja Jatobá) and of dry land (Sítio Fechado). For much the related fruits
were collected in six trees of Spondias sp, that they presented sanity good, with fruits of
healthful appearance and quality. The mature fruits of cajarana were harvested, in the
same period, in the Jatobá Farm (irrigated locate) and in the Closed small farm (Dry
land locate), District of Gertrudes Saint, both in the municipal of Patos PB Brazil. The
results demonstrate that the pulp of the Cajarana of the irrigated Hinterland and of dry
land, it will be able to constitute an important alimentary source, a time that the results
found in the characterization physicist-chemistry are compatible with the Standards of
Identity and qualidade (PQI) for pulp of maracujá of the weed (Passiflora eduli f.
flavicarca Degener), jambolão (Syzygium cumini), sleeve (Mangifera indica) and
acerola Malpighia glaba), and had presented acceptable values for the Normative
Instruction Nº 122, of 13 of September of 1999, established for the Ministry of Cattle
Agriculture and Supplying, for the cajá, fruit of the same gender. As global evaluation,
the study of sensorial analysis of the juice of the Cajarana of the Hinterland in dilution
1/1, it disclosed a satisfactory acceptance.
