Resumen:
Goat's milk is a raw material rich in fat and vitamins, which has a huge potential for the
production of dairy products, Paraíba holds a total of 546,026 dairy goats, with an average
annual production of 5,627,000 liters of corresponding milk 22% of the country's total production. For this reason, the objective of this work was to evaluate the quality of goat's
milk on a farm in the municipality of Monteiro-PB. The work started in October 2018 and
ended in March 2020, the physical-chemical analyzes were performed on the Complete
Ultrasonic Milk Analyzer - AKSO, for the milk composition parameters: fat (%), non-fat
solids SNG (% ), total solids ST (%), protein (%), lactose (%), minerals (%), density, the
somatic cell count was performed on the LACTOSCAN Somatic Cells Counter. All
parameters analyzed were in accordance with Normative Instruction No. 37. The somatic cell count obtained values below 1,000,000, reaching some monthly averages above 2,000,000 cells / mL. At the end of this work it was possible to conclude that the goat's milk analyzed is in excellent conditions for the production of dairy products and the consumption itself in natura.
