Resumen:
Entrepreneurship is important for creation and development of business generating more jobs and income options from the innovation that has been growing by the globalization. But, despite being widely discussed have still ill-defined concept, your looks and being targeted by many scholars of different areas in recent decades. With the increasing number of nutritionists in Brazil the labour market is becoming increasingly competitive and demanding more training of professionals, security and power of adaptation, making it increasingly necessary to form potential entrepreneurs since graduation. Having as main objective the student entrepreneur nutrition profile of a federal institution of higher education. This is a descriptive exploratory study of predominantly qualitative nature, based methodologically on the dialectical and historical materialism in which was realized with six students of nutrition to a higher education institution of the interior da Paraíba, attending the third, fourth and fifth period of the course. After the data collection started the analysis of the empirical material for speech analysis technique proposed by Fiorin. In this context from the existing contradictions, made it possible to reach four empirical categories: knowledge about entrepreneurship, entrepreneur profile, prospects for the labour market, the importance of entrepreneurship to education. This study made it possible to elucidate the importance of an active entrepreneur education in higher education institutions shaping the profile of potential entrepreneurs and enabling comprehensive discussions to graduating to, while professional, choose critically by the opportunities of the labour market.
