Resumo:
The meat market is increasingly competitive and complex with regard to the final product life requirement, as well as strict hygienic-sanitary control and the demand for diversification and aggregation of value to the products. The objective of this study was to evaluate the hygienic-sanitary conditions of meat commercialization in slaughterhouses in the Paraiba hinterland, in which ANVISA Resolution RDC No. 275/2002 was followed as recommendations. A structured questionnaire was applied with closed questions (check list) to the manipulators, as well as to the owners of the commercial establishments, in order to observe the specific conditions of hygiene in the proper places of commercialization. Several inadequacies regarding hygienic-sanitary aspects were identified in the slaughterhouses analyzed. Due to this, it can be concluded that the great majority of the cold stores do not meet all the evaluated items, emphasizing with this the importance of compliance with the resolution that aims to assure the supply of safe food to the consumer.
