Resumen:
The fish is an important part of the daily diet of many countries, contributing with % of the
world offer of protein of animal origin. In many countries the fish is an important source of
employment generation and income. in Brazil, the consumption of having iished for the
population is still very low, concentrating mainly on the period of Easter. This is due a lot of
times, the a lack of habit of the population in consuming fish, as well as the bad quality of the
fish that is offered to the consumers in supermarkets, freezer and fish markets. The bad
manipulation conditions, storage, sanitation and transport of the fresh fish contribute to the
loss of the quality and even to your deterioration until arriving to the final consumer. This
work had for objective to evaluate the handling, the hygiene patterns and quality of the fish
sold at the free markets and freezers of the cities of Cuité and Nova Floresta — PB, in the
period of September of 2010 to September of 201 1. For the collection of data forms were used
to verify the offer conditions, manipulation, hygiene and quality of the fish in these places
were inside of the norms recommended by the Agência Nacional de Vigilância Sanitária
(ANVISA) being bought the trades of the two above—mentioned cities. It was observed that in
the two studied cities, a great variety of marketed species exists, being found seven species
marketed in the freezers and 12 species in the free market in Cuité, while in New Forest ten
species, could stand out the tilápia Oreochromis nilolicus, the sardinha T riporthus angulatus
and the hake Merluccíus hubbsí. As the physical structure of the freezers of Cuité, these were
in an appropriate way, however, as the sanitation, the conservation and the manipulation of
the fish, was inadequate. In what he/she refers to the physical structure in the banks of the free
market of Cuité, it was not adapted as well as to the aspects hygienic-sanitariums. ln what
he/she concerns the free market of the city of Nova Floresta, it was verified that the marketed
specimens if they didn't frame to the quality patterns recommended by ANVISA. This way, it
is done necessary the implementation of good manipulation practices, conservation and
control of quality of the fish marketed in the free markets and freezers of the studied cities.
