Resumo:
Family agribusinesses stand out more and more, these being the main
responsible for the production of food in Brazil, demanding from producers more
attention as to the possible risks of contamination, which in turn violate the
integrity of the product. The implementation of quality programs empowers the
enterprise in the judicial legislation before the current legislation, ensuring food
safety. Therefore, the present work had as objective to elaborate the Manual of
Good Manufacturing Practices of an Agroindustry in the Sertão Pernambucano.
Initially a checklist was applied, where it was possible to evaluate how facilities,
equipment and utensils, handlers, transport and documents. Through the
identification of non-conformities, an action plan was developed, which contains
a description of the non-compliant items, the corrective action to be taken, the
stipulated deadline and the person responsible for the action. Standard Operating
Hygiene Procedures, Work Instructions, verification and monitoring worksheets
and finally the Manual of Good Manufacturing Practices were prepared. The
greatest number of non-conformities found were the lack of documents, handlers
and equipment (Figure 1). Through the elaboration of the Manual of Good
Manufacturing Practices, the agroindustry regulated by the current and
necessary legislation providing a safe product to the market.
