Nas últimas décadas, houve um avanço na tecnologia de embalagens com o intuito
de aumentar a conservação dos alimentos e minimizar os impactos ambientais
ocasionados pelos sistemas de embalagens convencionais. Diante deste fato,
objetivou-se elaborar e caracterizar filmes obtidos de resíduos da Rã-touro
adicionados de extrato de orégano e avaliar seu efeito na estabilidade oxidativa de
hambúrgueres caprinos adicionados de diferentes fontes lipídicas. O extrato de
orégano e o colágeno de Rã-touro foram submetidos a análise de fenólicos totais e
atividade antioxidante. O filme proteico foi avaliado quanto a opacidade, solubilidade,
variação de cor, intumescimento e permeabilidade ao vapor de água (PVA). Os
hambúrgueres foram elaborados seguindo 3 tratamentos: Um controle com adição
de toucinho (HT); com adição de óleo de soja (HS) e com adição de óleo de peixe
(HP), realizou-se a análise do perfil de ácidos graxos de cada fonte lipídica, e
avaliou-se no período de 0, 15, 30 e 60 dias a cor (a*, b* e L*), pH e índice de
oxidação. O extrato apresentou 1,54 EC50 (g / g DPPH) e 323,20 (mg EAG/100g)
respectivamente, e o colágeno não apresentou detecção nas duas análises. O filme
proteico obteve elevada opacidade em comparação com outros filmes (20,70%),
PVA de água 1,03x10-5 gH2O. mm/m2.h.mmHg e variação de cor (3,55), índice de
intumescimento de 75,25% e 29,25% de Solubilidade. O óleo de peixe demonstrou
ser rico em ácidos graxos polinsaturados EPA (17,903 %) e DHA (13, 264%), o óleo
de Soja em ácido linoleico (53,657%) e o toucinho em ácidos graxos saturados e
monossaturados palmítico (24,124%), esteárico (23,143%) e oleico (36,815%). Com
o monitoramento da estabilidade, após os, Ao fim dos 60 dias foi possível observar
que HP apresentou o maior índice de oxidação (11,1 mg de MDA/kg) fato atribuído a
composição do óleo de peixe que é rico em ácidos graxos polinsaturados, e HS o
menor valor (1,5 mg de MDA/kg), tal proteção é atribuída aos antioxidantes naturais
e artificiais em sua composição, Tocoferol e TBHQ respectivamente. Conclui-se que
o filme apresentou elevada opacidade e baixa permeabilidade caracterizando o
colágeno de Rã-Touro com uma excelente fonte de biopolímeros, que o extrato de
orégano é uma ótima fonte de compostos fenólicos e a substituição do toucinho por
óleo de peixe, apesar de mais saudável torna o hambúrguer mais susceptível a
oxidação. |

In the last decades, there has been an advance in packaging technology with the aim of
increasing food conservation and minimizing the environmental impacts caused by
conventional packaging systems. In view of this fact, the objective was to elaborate and
characterize films obtained from bullfrog residues added with oregano extract and evaluate its effect on the oxidative stability of goat hamburgers added from different lipid sources. The oregano extract and collagen of bullfrog were subjected to analysis of total phenolics and antioxidant activity. The protein film was evaluated for opacity, solubility, color variation, swelling and water vapor permeability (PVA). The hamburgers were prepared following 3 treatments: a control with the addition of bacon (HT); with the addition of soy oil (HS) and with the addition of fish oil (HP), the analysis of the fatty acid profile of each lipid source was carried out, and it was evaluated in the period of 0, 15, 30 and 60 days the color (a *, b * and L *), pH and oxidation index. The extract showed 1.54 EC50 (g / g DPPH) and 323.20 (mg EAG / 100g) respectively, and collagen was not detected in both analyzes. With the stability monitoring, after 60 days, it was possible to observe that HP had the highest oxidation index (11.1 mg MDA / kg), a fact attributed to the composition of fish oil, which is rich in polyunsaturated fatty acids. , and HS the lowest value (1.5 mg MDA / kg), such protection is attributed to the natural and artificial antioxidants in their composition, Tocopherol and TBHQ respectively. It is concluded that the film presented high opacity and low permeability, characterizing the
collagen of Bullfrog with an excellent source of biopolymers, that the oregano extract is a
great source of phenolic compounds and the replacement of bacon by fish oil, despite
healthier makes the hamburger more susceptible to oxidation. |
