Food production in Brazil is growing on a large scale, on the other hand it has been
found that food waste develops at high levels, impacts
environmental and economic expenditures. In this sense, the Food and Nutrition Units are
objective to reduce food waste by using the correction factor indicator. With
based on the correction factor, units can develop strategies to reduce losses, and
standardize home measurements. Considering the lack of home measurements tables for the
groups of sugary foods, vegetables and fruits, the present work aims to elaborate
a catalog of homemade and scientific measures of these food groups. It was a study
descriptive with methodological strategy in direct observation. Weights were measured for
elaboration of correction factors and homemade measures for 14 types of vegetables, 18 types of fruits
and quantified some sugars most consumed by the regional population. The search was
performed in triplicate, then the data were tabulated in Excel 20 I O to obtain the
means and standard deviation for fruits and vegetables. All foods were photographers in their
homemade measures. It was found that vegetables such as tomatoes presented a standard deviation
high in relation to other vegetables, the chard had a fc 32% lower than the values
recommended in the literature, fruits such as pineapple and avocado presented a correction factor
high, because they have thick skin, or numerous pits and show greater losses during the
removal of inedible parts. With all this, the catalog of scientific and homemade measures
for fresh fruits and vegetables and sugary foods, it is a tool
valuable to the community.
