Résumé:
The objective of this work was to characteristics the cupuaçu puip (Theobroma
grandiflorum Schum.), according to the chemical and heat transfer properties, important
aspeets to the cooling, freezing and storage systems at low temperature. The determination of these properties was accomplished in samples of integral pulp, 9°Brix and sifted, ali the samples was produced at the laboratory. The characterization of these pulps was made through the determination of the pH, total acidity, humidity, ashes, soluble and insoluble solids and total and reducers sugar. The density of the pulp samples was determined at the temperatures of 10°C, 20°C, 30°C, 40°C and 50°C through the picnométrico method. The thermal diffusivity was determined by DICKERSON'S method (1965). A calorimeter was used to do the determination of the specific heat. Theoretical models were used to the calculation of the density, the thermal diffusivity, the specific heat and the thermal conductivity. The obtained values were compared to the experimental ones.
