Resumo:
The potentialization of food reuse practices can be characterized as a solvable strategy for coping with hunger today. The need to raise awareness and empower the population through basic techniques for their development in any minimum production space becomes present in this scenario. This work proposes to develop together the Schools of the State Education Network managed by the 13th Regional Education Management, practice of reutilization of foods from school meals and in the perspective of the National School Feeding Program - PNAE to offer a continuous training course for the manipulators of food, based on the need to improve correct handling practices in the food preparation process, adequacy of the school menu, reduction of expenses and food waste, as well as the characterization of the product through physical-chemical and microbiological analysis. The work took place in three stages: visit the schools to apply the check list, interview with the students and collect the material for analysis in the laboratory; analysis of the material and promotion of the training course for food handlers. It can be noticed that in the food, chicken type, produced by the manipulators before the guidelines offered by the course was found the presence of salmonella / 25g and that after the course and orientations of the appropriate form of preparation it is absent. There was also a perception of the students regarding the quality and acceptance of the lunch served in schools, where in all rejection index is always higher permeating the need for the adequacy of the menu. Finally, it is necessary to reflect, analyze and discuss actions that can effectively permeate the compliance with established guidelines for the provision of quality school meals and the implementation of situations of discussion and reorientation of existing practices in schools , through a technical monitoring and directed to the reality of each unit of education, as well as to a greater approximation between science, school and community.
