Resumo:
Evaluation qualityof goat milkprocessedin aminiplant in Paraiba cariri. This study aimed to evaluate the microbiological quality and physicochemical goat milk
processed in a mini plant in Cariri Paraibano. We analyzed 32 breast milk samples
collected at the following points: brass, cooling tank, pasteurizer and packaging, between
the months of June 2014 to January 2015. It was used to search the parameters set out in
the legislation: total count of bacteria, coliform 30 / 35 ° C, coliforms at 45 ° C, acidity,
density, fat, EST, ESD, freezing point. It was also observed the efficiency of pasteurization
for the presence of the enzyme alkaline phosphatase and peroxidase all performed through
methods recommended by the Ministry of Agriculture Livestock and Supply (MAPA) is.
Verificou that the microbiological quality as the mesophilic count for pasteurized milk
samples and are packed in accordance with the law, however the results for coliform 30/35
° C showed significant differences between the samples and coliforms at 45 ° C showed
means above those permitted by law in the tank samples and pasteurized. For physical and
chemical analysis averages for fat and density were within the optimal parameters in all
samples, but the dry extract was lower than recommended. To Total Dry Extract, only the
cooling tank samples proved to be outside the box. The cryoscopic index, showed average
within the limit only for the brass. The presence of peroxidase was observed in 100% of
pasteurized and packaged milk samples as well as the absence of 100% for the phosphatase
enzyme in these steps. It was concluded that the goat milk produced by the mini plant by
microbiological tests complemented by physicochemical testified that mostly samples met
the minimum requirements provided, however it is necessary to control the microorganism
at the point of origin of the raw material.
