Abstract:
The goat, both at national and regional level plays an important role in the economy. With the increase in goat milk production in the Paraiba Cariri region, dairy goat became a prominent activity for development of this region generating income and reducing the nutritional deficiency of the population. Within the context presented, considering the growth of goat milk production in the Northeast and its importance in the state of Paraiba and the municipality of Zabelê-PB, this study aimed to trace a production profile of dairy goat and its interference in the quality of milk in the municipality of Zabelê - PB through milk tests to check whether they were in accordance with the parameters set by the Normative Instruction 37 to goat's milk, the Ministry of Agriculture, Livestock and Supply and applying questionnaires to municipal producers for the management of knowledge the properties. We evaluated the physico-chemical characteristics (determination of the Dornic acidity degrees, density at 15 ° C, fat, total solids non fat solids, cryoscopic index, protein and lactose) urea, somatic cell count and total bacteria. We analyzed 27 samples and through the values it was concluded that some values were out of the standard required by law. In the questionnaires applied in twenty-seven properties were determined dairy goat management profiles. It was observed through the results that the dairy goat in the studied properties remains, for the most part, as the main activity. The creation scheme adopted in most properties, is semi-intensive and general management is performed correctly; in relation to technical assistance, it was found disabled, requiring a professional suited to meet the producers. In general, some analyzes were out of the standard required by law, this may have been caused by a fault in the food and health management, or possible fraud.
