Resumen:
The objective of this work was to evaluate the effect of supplementation on tissue
composition and chemistry loin Santa Ines sheep and goats F1 (Boer X SRD) finished in
thinned caatinga enriched with buffel grass (Cenchrus ciliaris L). Used 24 castrated
animals, live weight (LW) 20 kg, two supplementation strategies were evaluated: the first
was the use of energy supplement (SE) the basis of ground corn (97%), the second was the
use of energy-protein supplement (SPE) consisting of soybean meal (50%) plus ground
corn (47%) in a completely randomized design in a factorial 2x2 crossover. The loin was
dissected into muscle, bone and fat tissue to determine the composition, and the meat was
used in the determination of the chemical composition. The use of protein-energy
supplementation improves muscle performance loin. Now independent of the type of
supplementation, the F1 Boer goats x SRD had higher amounts of muscle while Santa Ines
sheep provide greater amount of fat in the loin. Regarding the components did not interfere
proximate the type used for supplementation, however sheep Santa Ines lipid values were
higher when compared with goats.
