Resumo:
This work had as objective determines and compare the quality of goat milk producted on
the middle sertão and cariri paraibano comparing them to each other. It was used the
microbiologics parameters (total count of mesophilics, total coliforms, termotolerants
coliforms and presence of E. coli), physical-chemical (acidity in degrees Dornic, density,
tenor of the fat and extracts dry total and degreased) and biological (detection of antibiotics
residues) for determination of your quality. It was observed that the microbiologic quality
the mini-plant A and B obteined average for mesophilics count, total coliforms and
termotolerants of 2,4·109 UCF/mL and 8,5·109 UCF/mL; 1,9·104 MPN/mL and 4,4·104
MPN/mL; 1,1·102 and 1,5·103 respectively. The E. coli prevalence was of 2% in the plant
A and 0,67% for to B. The found physical-chemical parameters went respectively to the
plant A and B: acidity 16,66ºD and 15,14ºD; density 1026,82 and 1028,43; fat 4,04% and
3,95%; extract total dry 10,68% and 12,11%; extract degreased dry 6,63% and 8,16%. The
antibiotics residues were of 21,3% and 24% for to A and B respectively. Like this, both
mini-plants presented similar quality and they need if it pawns in improving the quality of
the received product.
