Resumen:
Hygienic-sanitary evaluation of broiler chicken meat from establishments that slaughter and/or sell in the city of Patos - PB. With the objective to evaluate the sanitary conditions and possible risks microbiological of in natura chicken meat in establishments that slaughter and/or market in the city of Patos/Paraíba, were analyzed 37 chicken carcasses, from the Feira Central, slaughterhouses and supermarkets. For it is investigated aerobic mesophilic microorganisms, filamentous fungi and yeasts; total coliforms, thermotolerant coliforms and E. coli; Staphylococcus aureus and Salmonella spp. The results revealed a mesophilic counts above 106 CFU/g in 26 of 37 samples, whereas the yeast and filamentous fungi counts ranged from <101 to 6.6 x 104 CFU/g, and the highest percentage of results in the interval 103 to 104 CFU/g. Twenty-five (67.58%) of 37 samples had a count above 2.4 x 105 MPN/g for total coliforms. On the count of thermotolerant coliform observed that 21 samples were found inappropriate for human consumption and E. coli being isolated in 30 samples. S. aureus and Salmonella spp. were isolated in 29 and 32 carcasses, corresponds a percentage of 78.37% and 86.49% positivity, respectively. In conclusion, is necessary to take measures aimed at improving sanitary conditions and reduce microbiological risks that consumers are subject to consume chicken meat marketed in the city of Patos/Paraiba.
