Abstract:
The Brazil has shown steady growth in milk production which is becoming a major ally in
the source of income of small and medium producers. The quality of milk is directly
related to health, feeding and handling of animals, besides the quality of life of consumers
but also of producing families. Thus, the aim of this study was to characterize the quality
of refrigerated raw milk obtained from farms located in the municipality of Queimadas
state of Paraíba. 40 samples were collected on family farms and realized physico-chemical
analyzes of acidity, density, freezing point, fat, total solids (TS), solids not fat (SNF) and
protein and their results compared with the values referenced by Normative Instruction 62,
the Ministry of Agriculture, Livestock and Food Supply - MAP (BRASIL, 2012) for the
designated product refrigerated raw milk. It was observed that 32% of the samples were
outside the standards recommended by legislation, a value for conditions where milk is
produced, this may not show much concern from the standpoint of product integrity, but
the nutritive value nonstandard can interfere with the consumers' quality of life as well as
performance thereof for the production of derivatives and consequent injury to
industrialization thereof.
