Abstract:
In recent years the goat production in the state of Paraíba has changed markedly with
emphasis on milk production, where the program "Milk Paraíba" was one of the
decisive factors for this change. Although noticeable evolution of the productive chain
of goat milk, studies have shown that the quality of the milk produced in many
establishments is not suitable for human consumption due to physical and chemical
changes, the presence of antimicrobial residues and microbiological contaminants.
Therefore, this study aimed to develop a training process with smallholder producers of
goat milk into the good management hygienic and sanitary practices, so as to promote
the health of livestock and quality of the milk produced. Were visited receiving stations
of goat milk in 21 counties and 11 municipalities from Cariri e Médio Sertão Paraibano,
where 1148 samples were collected of goat milk which were subjected to
physicochemical analysis, presence of antimicrobial residues using Delvotest ® and for
the methods of diagnosing subclinical mastitis, the California Mastitis Test (CMT). To
presence of antimicrobial residues of the samples, it was found that 36 (t3.13%) were
positive and 14 (1.21%) were the limit of detection, the 28 samples of cooling tanks 02
(7.14%) positive and 20 samples of pasteurized, all were negative. The positive samples
and the ones in the detection limit for residues of antibiotics served as reference for the
visits to 24 properties located in the Médio Sertão and 18 in Cariri Paraibano. Along the
research conducted, were developed a primer and was made a work sharing among the
university - faculty and students and goat milk producers seeking to improve the
methods of raising goats and means of production of milk, in order to solve the
problems and improve the quality of milk produced. Was observed in the end, a good
acceptance of the producers who say increasing the quality of the milk produced.
