Resumo:
Aiming to assess the sanitary conditions, possible risks of microbiological beef "in nature"
and the physical conditions of establishments that sell in the public market, municipal
Ducks / Paraíba, we analyzed 10 samples of beef from the market public. The study was
micro-organisms coliforms, E. coli and S. aureus. The analyzes were performed by
counting on plates with Kit Compact Dry EC and XSA ®. The results show that all
samples were contaminated and that 60% of the samples were found unfit for consumption
because they present count above the standard of 5x105 CFU / g for Total Coliform and E.
coli. And for S. aureus were detected in 10 samples with six counts over 105 CFU / g, still
it was found that the municipal facilities of the public market are presented inadequate. We
conclude the necessity of taking measures to improve sanitary conditions and reduce
microbiological hazards that consumers will be subject to consume the fresh beef sold in
the public market, municipal Patos, Paraíba.
