Abstract:
In this research 51 samples of “manteiga de garrafa” were analyzed obtained in all the
sale points located along BR230
in the Paraíba State Brazil
in order to determine your
quality, being evaluated the parameters: labeling and packings, the microbiologics and
the physical chemical. When evaluating the adaptation of the labeling and packing of
the “manteiga de garrafa” in agreement with the legislation. Of these 7 only possessed
labels. The material of the packings 50 they are glass bottles and 1 it is bottle of plastic
type PET, with 50 of capacity of 500 mL and 1 of 220 mL. The covers they were new
and of plastic material. However two of them were defective, presenting broken parts
and four was too much dirty. In the microbiologic study tried to be determined the total
count of mesophyllous, the most probable number of total coliforms, the most probable
number of thermotolerants coliforms and count of Staphylococcus aureus positive
coagulase. Among the studied samples, it was not obtained bacterial growth. These
results are due to the processing of the product, that goes by great heating and it is still
wrapped in discharges temperatures. The butter of bottle of this study is like this
capable to the human consumption in what it concerns the microbiologic characteristics.
In the physicalchemical
evaluation of “manteiga de garrafa”. It was evaluated the
titratable acidity, fat tenor, pH, nogreasy
solids, humidity tenor and Kreiss reaction.
The titratable acidity 0.73% to 2.69%; the fat tenor varied from 96.04% to 99.91%; the
pH varied from 2.05 to 4.51; the nogreasy
solids varied from zero to 3.78%; the
humidity tenor oscillated from 0.06% to 0.48%; the Kreiss reaction was positive in 22
(43.14%) samples. Only 6 (11.76%) samples didn't present any unconformity among the
ones that they were out of the patterns, 11 (21.57%) they presented unconformity in 1
parameter; 19 (37.25%) in 2; 12 (23.53%) in 3; 2 (3.92%) with 4 and with 5 only 1
(1.96%) sample. The parameter more unconform was the nogreasy
solids with 32
(62.75%), the Kreiss reaction with 29 (56.86%), they are the acidity and the fat tenor
with 16 (31.37%) and the humidity with 5 (9.80%). It is ended that the labeling presents
great unconformity, that the used packings are inadequate, and that the “manteiga de
garrafa” presents excellent microbiologics characteristics; however it doesn't assist the
physicalchemical
requirements stipulated by the legislation.
