Resumo:
The goat milk is being used broadly in the feeding, due their therapeutic and dietary characteristics. In this work it did evaluate the characteristics physiochemical of the raw milk and the presence of residues of antibiotics of the group - lactâmicos in three stages
in the located mini-plants in the Cariri paraibano. The accomplished physiochemical analyses were: acidity in degrees Dornic, Density to 15°C, fat tenor (%), total dry extract (%) and degreased dry extract (%). THE research of antibiotics the test
imunoenzimático of IDEXX was used. With base in the obtained results, it was observed that the acidity had an average of 16,98°D. In the first stage it was observed that of the 246 analyzed samples, 20,33%, in the second stage 10,69% and in the third stage 25,37% they were out of the patterns as the acidity. For the density he/she obtained an average of 30,50°D. In the first he/she found 8,13%, 2,79% and 7,46% for the first, Monday and third stage respectively. As the fat had an average 3,90% with 50,4%, in the first stage, 6,51%, in the second stage and 7,46% in the third stage of samples out of the legal patterns. In the analysis of the total dry extract he/she obtained an average of 12,78% with 13,41%, 9,76% and 9,95% of samples out of the patterns in
the first, Monday and third stage respectively. In the degreased dry extract he/she was an average of 8,61 with 10,10%, 9,30% and 12,40% of samples out of the patterns in the first, Monday and third stage respectively. In the first stage of the research of residues
of antibiotics 17,48% of the analyzed samples they were positive for antibiotics. In Monday and third stage 18,60% and 34,83% respectively were positive as the presence of residues of antibiotics. It is ended that there was a significant increase of samples out
of the patterns in the third stage, for the physiochemical characteristics as for the presence of residues of antibiotics that was not the expected since the proprietors received orientations about the quality of the milk. In agreement with those results, it is clear the need of a constant monitoramento, of the milk that is supplied by the miniplants for the population.
