Resumo:
This work was conducted in the municipalities of Paraiba Agua Branca and Juru, and
aimed to evaluate the physico-chemical and microbiological quality of milk produced by
small producers in these two municipalities. The producers of the municipality of Agua
Branca participate in the program's bread and milk the state government, and thus deliver
the milk in a small pilot of the city where it was collected directly from the producers of
the cans as they were coming for delivery. In the locality of Juru, the producers were
selected producers marketing milk informally in their homes, farms or businesses directly
to the city's population and was also collected from the buckets of direct producers, as they
were coming in location where the product is marketed. The physical analysis - chemical
were carried out in degrees Dornic acidity, density, content of fat, freezing point, dry
extracts and total fat. Already in the microbiological tests were performed aerobic
mesophilic microflora, total coliform and fecal coliform.Observed-that for the physical
analysis-chemical producers had averages of 18.1 ° D for acid, 29.3 g / L for density, 2.9%
for fat, - 0.541 for density, to 11.21 EST and 8.21 for ESD.Microbiological analysis of
milk producers had an average of 1.1 x 106UFC/ml for mesophilic count, 1.5 MPN / ml of
total coliforms and 0.35 MPN / ml of coliforms term tolerant.With this result, consider -
the need for some producers change their habits of handling, so they can improve the
quality of milk both physical-chemical and the microbiological, because even the case of
raw milk, some samples are alien to the law of the country.
