Abstract:
The liquid and solid albumen of the green dwarf coconut consist of important raw material and much used in the food industry, generating employment and income Therefore, the objective was to determine the post-harvest quality of the liquid and solid albumin of the green dwarf coconut produced with and without mulching under different irrigation shifts.
The green dwarf coconut has 7 (seven) years of planting, spaced 7 m between rows and 7 m between plants, totaling 50 plants, which were divided into 5 blocks, where each block had 10 fruits, 5 plants for cover (TR1: daily irrigation, TR2: irrigation every 2 days, TR3: irrigation every 3 days, TR4: irrigation every 4 days, and TR5: irrigation every 5 days). 5 days, totaling 25 plants for mulching and 25 without coverage). The raw material was taken to the Laboratory of Chemistry, Biochemistry and Food Analysis of the Center for Agricultural Sciences and Technology - CCTA, Federal University of Campina Grande - UFCG, Campus of Pombal-PB, for the analysis of pH, AT, SS, Vitamin C, Phenolic Compounds, Flavonoids and Anthocyanins. The experimental design was a completely randomized design (DIC), where a 2 x 5 factorial scheme was used (factor 1: treatments with and without mulching and factor 2: irrigation shifts (TR1, TR2, TR3, TR4, TR5 (P ≥ 0.05) was significant (p ≥ 0.05) in the treatment with x without mulch in the five irrigation shifts.
