Abstract:
Currently searching for alternatives for the production of peanut extract on the basis of soy extract, used in programs for distribution to low-income families, where the same product is obtained in what is called mechanical cow. Groups or species of microorganisms may be present in food, this is related to characteristics of the food, thus favoring their multiplication. Sensory analysis is widely used in research by industry to determine the preference and acceptance in the market for a product that meets these quality characteristics, with a maximum production economy. One of the problems during cultivation and postharvest peanut refers to the control seeds and grains because of mycotoxin contamination. In this paper, we studied techniques that came from enable the production of peanut extract to be used in programs for
distribution to low-income families and also evaluated the degree of aflatoxin contamination in peanut extract and microbiological, physico-chemical and sensory acceptance of peanut extract enriched with guava and umbu fruit pulps of the region, stored at room temperature (± 26 ° C) and freezer (-18 °C). The microbiological characterization was based on quantification of molds and yeasts, total and fecal
coliforms. The physico-chemical tests based on the determination of acidity, pH, moisture, dry matter, protein and ash. The sensory tests peanut extract enriched with guava pulp and umbu were evaluated by testing the hedonic scale. The extractions for identification and confirmation of anatoxins in the samples were performed on seeds used for obtaining the extract of peanuts. The results showed an increase in acidity and decrease in the pH of the drink stored to the storage time. The protein content in the 40% formulation is greater for umbu stored at room temperature and freezer. To the product quality, microbiological testing showed to be satisfactory. The overall acceptance ranged from "neither liked nor disliked" and "liked moderately." In the analysis of aflatoxin was not detected in the presence of seeds used.
