Abstract:
It was analyzed, in this research, the storage of "macassar" bean under different treatments involving castor bean in the whole and partially defatted forms and just in the triturated peei, in the percentage of 5% and 10%, respectively, without treatment and with conventional treatment (gastoxin), for 6 months. At every 30 days of storage the following subject were analyzed: a) effect on the control of pests; b) effect on the nutritional component, and c) influence of the treatments in the time of cooking. It was concluded with relationship to the infestation, that the treatments Ti and T2, at which used dosages of whole castor bean (5% and 10%) were efficient in the combat to the pests during the 180 days of observation, and that the active principie of castor bean in the combat to the pests of grains, is presented in its oil; in relation to the physical-chemistry and nutritional characteristics, it was verified that: a) treated grains with castor bean in its whole form and in any dosages (5% or 10%) presented the smallest humidity
content at the end of the storage (12,2% to 12,8% h.b.) while the other treatments at the end of this period showed humidity content varying between 13,30% and 14,30% h.b.; b) the ethereal extract content varying from 1,003 to 2,101 and the largest content of ethereal extract was observed for the "macassar" bean treated with 10% of whole castor bean; c) the ethereal extract content obtained decreases with the reduction of the content of castor bean oil used in each
treatment and the oil absorption for the grain increases with the time of contact, that is to say, the ethereal extract content (%) increases during the storage period; d) ashes and proteins content of "macassar" bean were not affected by the use of castor bean. By the cooking analysis, it was verified absence of alteration to time of cooking in "macassar" bean treated wifli castor bean, during the 180 days of storage.
