The present research was to evaluate the quality of the physicochemical parameters of the IN NATURA milk that is commercialized in the municipality of OLIVEDOS-PB, we know that milk is one of the main foods of the food pyramid, important for human and animal health, considered one of the most important materials. to generate employment and income for producing families in Brazil, and at work, analyzes of 10 samples of milk from different producers and traders who resell raw milk were carried out, the analyzes were carried out using the complete ultrasonic method - AKSO in the Technology Laboratory of Food (LTA) of the Federal University of Campina Grande, Campus Sumé. And the parameters verified in the IN NATURA milk was to know the compositions present in the milk: fat, SNG, protein, lactose, mineral salts, pH, temperature, added water and the freezing point. As these compositions were verified, although many of the parameters were not in accordance with the standard norms that IN 62 establishes, the fat samples D; G; H; the values were below the standard norm (2.97, 2.31 and 2.20), in the SNG the samples F; and G; the value was below the minimum required (7.98 and 8.29), mineral salts in sample F; and G; had their values below the average of 0.7%, in the density of 2 samples A; and is; had values above the standard norm (1034.75 and 1035.22) and the freezing point 8 of the 10 samples presented values between (-0.502 to -0.656) values outside the standard norm, since other compositions presented results in conformity for the physicochemical parameters within the standard norm that allowed in the case of proteins showed values between (2.92 to 3.66) all values within the standard mean. As for lactose, its values were above the minimum required, which is 4.3%, the existence of water addition in milk was not proven. And finally, the purpose of the work was to verify the quality of cow's milk that is sold in the municipality of Olivedos-PB.
