Resumo:
Apparent viscosities of sword mango pulp in 25 and 30ºBrix concentrations at 10, 20, 30, 40, 50 and
60o C was determined. The pulps were extracted of mangos in half ripe state and submitted to
concentration in rotative vacuum evaporator. The viscometric determinations were accomplished in a
Brookfield viscometer, RVT model, in nine rotation speeds: 0,5; 1; 2,5; 5; 10; 20; 30; 50 and 100 rpm.
The pulps showed pseudoplastic behavior and viscosities were reduced with heating in studied
temperature. The viscosity of the samples to 30o Brix showed lineal correlation with temperature, with
average determination coefficient about 0,90.
